CHEESECAKE

Bahan:
600 gr cream cheese
200 gr gula
lemon juice
esence vanilla
4 butir telur
1/4 pack digestive biskuit
30 gr butter

Cara:
– Hancurkan biskuit, campur dengan butter sampai rata.
– Alasi cetakan anti lengket dengan kertas roti.
– Masukan biskuit yang telah dicampur dengan butter tadi ke dalam cetakan, tekan-tekan sampai padat.
– Kocok cream cheese sampai halus, tambahkan lemon juice, gula, telur, vanilla.
– Masukan adonan cream cheese ke dalam cetakan yang telah diberi dasar biskuit, panggang dalam oven dengan suhu 175’C selama 45 menit.

CHOCOLATE CUPCAKES

Ingredients:

1/2 cup (50 grams) Dutch-processed cocoa powder
1 cup (240 ml) boiling hot water
1 1/3 cups (175 grams) all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (113 grams) unsalted butter, room temperature
1 cup (200 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract

How to prepare:

Preheat oven to 375 degrees F (190 degrees C). Lightly butter, or line 16 muffin cups with paper liners.

In a small bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature.

In another bowl, whisk together the flour, baking powder, and salt.

Then in the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract. Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.

Fill each muffin cup about two-thirds full with batter and bake for about 16-20 minutes or until risen, springy to the touch, and a toothpick inserted into a cupcake comes out clean. Remove from oven and place on a wire rack to cool. Once the cupcakes have completely cooled, frost with icing. You can either spread the frosting on the cupcakes with a small spatula or if piping, use a large Wilton 1M open star tip to make lovely swirls.

CHOCOLATE FUDGE FROSTING

Ingredients:

4 ounces (120 grams) unsweetened chocolate, coarsely chopped
2/3 cup (150 grams) unsalted butter, room temperature
1 1/3 cups (160 grams) confectioners (powdered or icing) sugar, sifted
1 1/2 teaspoons pure vanilla extract

How to prepare:

Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature.
In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until it is light and fluffy (about 2 minutes). Beat in the vanilla extract. Add the chocolate and beat on low speed until incorporated. Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2 -3 minutes).

Makes about 16 cupcakes.

CHOCOLATE CAKE

Resep aslinya sih chocolate banana cake tapi berhubung aku kepengennya chocolate cake doang terpaksa pisangnya dicoret :D.
Tapi waktu bikin pertama kali ga berani ngubah2 resep karena takut gagal, jadilah di banana chocolate cake ini. Tekstur kuenya moist dan nyoklat banget. Tapi agak kemanisan menurutku karena aku ga terlalu suka manis… Silakan dicoba ^^

Ingredients:

2 cups (400 grams) granulated white sugar (kalo gak suka manis 250-300 gram sudah cukup)
1 3/4 cups (245 grams) all-purpose flour
3/4 cup (75 grams) unsweetened cocoa powder (regular or Dutch-processed)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs
1 cup mashed ripe bananas (about 2 medium sized bananas)
1 cup (240 ml) warm water
1/2 cup (120 ml) milk
1/2 cup (120 ml) corn, safflower or canola oil
1 1/2 teaspoons pure vanilla extract

How to prepare:

Chocolate Banana Cake: Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven. Butter, or spray with a non stick vegetable spray, a 9 x 13 inch (23 x 33 cm) pan. Set aside. 

In a large bowl whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In another large bowl, whisk together the eggs, mashed bananas, water, milk, oil, and vanilla extract. Add the wet ingredients to the dry ingredients and stir, or whisk, until combined. You will notice that the batter is quite thin. Pour the batter into the prepared pan and bake for about 35 to 40 minutes or until a toothpick inserted in the center of the cake comes out clean.  

Remove from oven and let cool on a wire rack. When completely cooled, frost with the Ganache.

FRENCH CHOCOLATE GANACHE FROSTING

Ingredients:

8 ounces (227 grams) semisweet or bittersweet chocolate, cut into small pieces
3/4 cup (180 ml) heavy whipping cream
1 tablespoon (14 gram) unsalted butter

How to prepare:

Place the chopped chocolate in a medium sized stainless steel, or heatproof bowl. Set aside.
Heat the cream and butter in a medium sized saucepan over medium heat. Bring just to a boil.
Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth. When Ganache has completely cooled, beat until soft and fluffy. Then spread the frosting on top of the cake.

Serves 16 people.

VANILLA CUPCAKES

Bahan:
175 gr margarin
125 gr gula pasir halus
6 kuning telur
3 putih telur
160 gr tepung terigu protein sedang
30 gr tepung maizena
60 ml susu evaporated (aku pakai susu cair)
1 sdt poppy seed (aku ga pakai)
1/4 sdt esens vanila

Topping:
Buttercream

Hasil 24 buah.

Cara membuat:

Kocok margarin dan gula sampai lembut. Masukkan telur satu persatu bergantian dengan setengah bagian tepung terigu.
Larutkan tepung maizena dengan susu cair. Masukkan sisa terigu bergantian dengan campuran maizena ke dalam adonan.
Tambahkan esens vanila, kocok rata.
Tuang ke dalam paper cup yang sudah ditata dalam loyang muffin.
Panggang selama 20 menit dengan suhu 180 derajat Celcius.
Hias dengan buttercream.
